Crash and I doctored the Cracker Barrel clone of this dish to suit our
tastes. If you like this kind of thing, you may just fall in love with this recipe. And see? I didn't even call it hotdish. <G> * Exported from MasterCook * Damsel's Hashbrown Casserole Recipe By ![]() Serving Size : 0 Preparation Time :0:00 Categories : breakfast/brunch casseroles potatoes side dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 stick butter 1/2 teaspoon freshly ground black pepper 1/2 cup onion -- minced 1/4 cup green pepper -- minced 10 1/2 ounces cream of chicken soup, condensed 2 cups Colby cheese -- shredded 2 pounds hash browns, frozen -- thawed Topping: 1 cup Colby cheese -- shredded 1/2 pound bacon -- partially cooked, drained Preheat oven to 350 degrees. Spray a 9x13 pan generously with non-stick spray, or use butter. Combine all ingredients, except potatoes. Blend well. Gently mix in the potatoes, and pour into prepared pan. Bake, uncovered, at 350 degrees for 50 minutes.
