Hi All -
Recently (as in last week) went to Magic Kingdom in Orlando and ate at the Liberty Tree Tavarn. I had the "Fresh from the Harbor" which consisted of "cider-cured salmon on griddled pumpkin bread with butternut vinaigrette." I'd really like to make this at home but am having problems coming up with a recipe. It was a layered dish, starting from the bottom: pumpkin bread, with squash (I'm going to guess spaghetti squash - it looked like spaghetti squash), then a piece of salmon (medium rare) with the vinaigrette (the color of butternut squash - not orange, not yellow, in between) on it. It was a very sweet dish - brown sugar sweet versus white sugar sweet. I can't find a recipe for cider-cured salmon unless it's smoked, and the salmon in the dish was not smoked. I also can't find a recipe for butternut vinaigrette. Can anyone please help with either a recipe for smoked salmon or butternut vinaigrette or the whole kit and kaboodle? Thanks! |
