It's national pizza day. Steve will make one or two if he hears about it.

I'll have my last two eggs fried over easy with toast then maybe later,
the pot pie that I didn't make yesterday.

Grocery store tomorrow though..been 3 weeks now. It's time.

What kind of schumck has two last eggs... I've never had less than two
dozen eggs in my fridge. Every time I go shopping I buy an 18 egg
box of eggs... right now there are three cartons of three dozen eggs
in the fridge. Eggs are cheap, no normal person waits until they have
only two eggs left. Gary lives like a pauper.

I have 2 eggs probably 5 times a week. Fried, scrambled, soft and hard
boiled. Toss in the occasional bagel or pancakes the other 2 days.

I like the occasional quiche too. Later this week will be bacon and
broccoli.

We too. Eggs make a great meal. And we use eggs for baking, and
soups... egg drop soup is often eaten here.

Sheldon, you're the only poster I know who *regularly* cooks a dozen
eggs at a time with potatoes (aka a frittata). How many people have a
reason to cook a dozen scrambled eggs at a time? I have also mentioned
in the past, whenever you bring up this dozen scrambled eggs, I do not
like reheated scrambled eggs. They tend to get tough when reheated.

Very long. I actually like them to be a little aged if being
boiled, easier to peel.

When I had a bunch of chickens, I stashed some away for that
purpose and used fresh for fried eggs.

I get frustrated with the egg supply here. My wife gets upset if I buy
too many eggs. I only have them once or twice a week. She has them
everyday. Once in a while I feel like having eggs and there aren't any. ;-(
Not the end of world, but frustrating.

I eat them more often. I like 2-3 fried over easy with some toast.
Sometimes with a small potato. Sometime with sausage if I have some.

My shortage this time was because I haven't shopped in 3 weeks which is
rare. I had 2 dozen in the fridge 3 weeks ago. I'll be going this
morning and will buy a 30-count tray ($1.99)

Each time we shop eggs are automatically on the list. We buy them in
18 egg cartons and there are never too many in the fridge. Eggs are
easy to use in myriad recipes; all kinds of baked goods,
omelets/fritatas of all sorts, and my favorite, chicken egg drop
soup... 4 eggs to one quart.
Eggs are the best bargain at the market, an excellent source of
protein for very little money... and the easiest quickest dishes to
cook. Tops Market in town very often has Peewee eggs on sale at
39¢/doz... two Peewees equal one large. All egg shells go into our
composter... even egg cartons get composted.
At least once a week I'll hard boil 1 or 2 dozen for the fridge... we
both like hard boiled eggs. My wife will bring a couple for her
school lunches, we both like sliced egg sandwiches. My wife doesn't
like them but I love pickled eggs, they will keep for months and need
no refrigeration.
There are more recepies for eggs than any other item.

How nice for you. I'm not all that fond of eggs. A couple eggs every
few weeks is plenty for me.

A couple of months ago I ran across a set of two egg keepers by Lock
and Lock. Each holds 18 eggs. I generally have one keeper full and
the other has a diminishing number. I am very happy that I found
these egg keepers

He was here last night after spending 3 days there. He went back today with
the intention of spending 2 nights. But he's mainly there to do work on the
farm as in clearing away a lot of brush and burning. It's best if he stays there
and drive the 3 or 4 miles to the farm rather than staying here and driving
20 miles there.

That's exactly correct. The oldest eggs are the easiest to peel when boiled,
but the freshest eggs have the firmest yolks for basted or over-easy/medium.
I used to boil up a dozen eggs to take along on camping/floating trips. One
time I went camping with some folks I worked with, and some of the dumbass
guys failed to bring enough food, so I shared my hard boiled eggs with them.
One of them said, "Man, you make the best ****ing eggs!" I told him that they
were just boiled eggs, not any different from any other boiled eggs, and that
they were just really hungry. He continued praising the eggs, saying how easy
it was to peel them.

When the "Occupy" folks were having their things in downtown StL, I used to
buy six or so dozen eggs, hard boil them all, then put them back in the cartons
and drive them downtown. At the time, they were less than $1 a dozen. Eggs
are a real bargain.

Another thing I do is I buy jumbo eggs for fried eggs, and large for everything
else. My wife is constantly baking cakes and whatnot, so she needs large eggs.

I don't have a problem with anyone preferring eggs with yolks vs. eggs
with only whites. What I don't understand is anyone somehow feeling
superior for about liquid egg whites from a carton that pretends to be
the same as fresh scrambled eggs. Even if you bother to separate the
yolk from the whites.

I've tried the refrigerated carton egg substitues. Not bad but that's
not an endorsement. IMHO, you need to add a lot of seasoning to make
egg whites from a carton taste like anything memorable. Not worth the
money. YMMV.

I tried them. I didn't notice any difference between them and freshly
separated egg whites. They were every bit as bland as the real thing. I
would rather had just the yolks.

Lunch to day..... a beat a couple eggs with some Trinidad hot sauce. I
browned some butter in a pan and then wilted a small handful of spinach
in it and then added the eggs and stirred them around until they were
just set.

I used cartoned whites when I was learning to make Parisian macarons.
However, I didn't really succeed until I used fresh. Of course I had to
find recipes that used up the yolks.

Good to know. Scrambled or hard-boiled for me; I rarely use eggs any
other way.
