My paternal grandmother's recipe. It's delicious!
On the rare occasions we visited, Grandma always had homemade candy wrapped in waxed paper in a dish in the living room. This was the best! 2 c. sugar 1 c. milk 1-1/2 Tbs. butter 1/2 c. chopped dates 1 c. chopped walnuts 1 c. shredded (sweetened) coconut 1 tsp. vanilla extract Combine sugar, milk and butter in a saucepan. Cook to soft-ball stage (about 240F). Add dates and cook five minutes longer. Add remaining ingredients and stir quickly until mixture is thick. On a sheet of 6 foot long waxed paper, pour the mixture quickly along the center. Use a knife and a spoon to form and spread into a 1-inch square length. Mixture will be hot! Let set until cool. Cut into 1" cubes and wrap each piece in waxed paper. Yield: 1 lb. candy Jill |
