I'm stopping by to say hi and to let you know that I miss being able to participate in rfc, but think of you all (or y'all) often. New job responsibilities and an ageing parent make it difficult. The following is a recipe I got at last nights weight watchers meeting. (Just a little brag, I've lost a few pounds and a couple of sizes since the last cookin' ) :-) Happy RamaHanuKwanzaMas @@@@@ Now You're Cooking! Export Format Cranberry Salad salads 16 oz cranberry sauce, jellied 10 oz pineapple chunks in juice 3 oz lemon gelatin 7 oz diet sprite 8 oz Cool Whip, non fat 8 oz cream cheese, non fat; softened 1/4 cup black walnuts, crushed; optional Salad: Drain pineapple, saving juice, add water if necessary to measure 1 cup. Bring pineapple juice to a boil, stir in gelatin, set aside until it reaches room temperature but not set. Once gelatin has reached room temperature, mix in crushed pineapple, cranberry sauce and diet sprite. Pour into 8" square dish and refrigerate until set. Topping: Beat cool whip and cream cheese together. Smooth over salad. Top with crushed black walnuts.
