And yes! Beans are involved.
Do you ever cook/make something that you can never exactly recreate because you were using up odds and ends? Most common in this house would be casseroles, soups and salads. But I just made the best warm bean and cheese dip! I started with a blob of cream cheese. I don't really like the stuff. I bought it to make a cheese ball. I didn't actually like the cheese ball at first because it tasted too much of the cream cheese and it called for Worcestershire sauce, which I don't like either. I only put a touch of it in there but on first eating, that and the cream cheese overpowered it. I let the ball sit for a day and the flavor was much better but still not quite what I wanted. So I'm not going to make that again. Anyhoo... I began melting the cream cheese in a pan, then added the last little bits of various cheeses then some shredded Mexican cheese as it seemed to need more cheese. Also added leftover refried beans and the last of the pico de gallo. It's perfect! Not too runny. Not too thick. No overwhelming cream cheese taste. Just yummy! I know I can make this again but it won't be quite the same as I'll never have those same ingredients in those same amounts. But for now... Yum! |
