Default Interesting dinner

I made something loosely based on what Jinx made.

My shopping trip got me 2 pounds of ground beef that expired today. I
browned that up, put some in the freezer in small portions and the rest =in
a casserole dish. I add three bags of frozen veggies. I got things a while
back on clearance somewhere. Red potatoes, pea pods and red peppers in some
kind of sauce with herbs. Seemed not to be much sauce. To this I add three
carrots and three celery ribs that I sliced and cooked briefly in the
microwave. Also dried onion, parsley and black pepper. A can of cream of
mushroom soup and another of cream of celery. Plus some water to thin it
down. Baked uncovered until heated through. I debated adding cheese but
decided not to as it sounded weird with the pea pods.

As it turned out, we had an unexpected guest for dinner so I was glad that I
had plenty. Was a little worried that it might not be super tasty, but it
actually was quite good. If I make something like this again, I will add
fresh onions and more of them.

Humm.

To me the main thing 'off' there was adding the ground beef. The rest
(not sure why you nuked the celery but it was going to be cooked
anyways) would have worked with a buttermilk and roux gravy.

I slightly cooked the carrots and celery because the other veggies were
partially cooked. Never had buttermilk gravy. Does not sound good to me.
Don't like buttermilk. Never have it in the house and rarely have milk. I
just used what I had.
