Oven baked chicken thighs, rice, and mixed frozen veggies. A frozen half

Main - Pot roast... potatoes, celery, yes... lots of carrots.

I love salmon patties, but I havent had them in years. Since DH went to
go check on the Florida house, its just my DD and I at home this weekend.
Its an uncomfortable 40 degrees out so a comfort classic, hamburger
€śhotdish€ť, is on the menu for tonight.

pork loin steaks pounded , breaded , and pan fried (I'd grill , but it's
raining ...gotta get some kind of roof over at least part of the deck !)
accompanied by leftover smashed taters and leftover green beans . She'll
probably slice up the other steak for a chef salad tomorrow for her
at-work "lunch" . Which is actually dinner .

I can't help wondering why all the female former housemates left.

When you advertised vacancies, why didn't they jump at the chance to
move back in to a newly renovated home at low rent with free taxi
service and meals laid on?

Why won't they live with you any more?

No noodles. Its pretty much scalloped potatoes with carrots, and browned
hamburger (with diced onion) instead of ham. The ratio of meat and carrot
to potato is higher, too., like 1/3 each. Mixed with a basic scalloped
potato sauce (no cream of soup). Dont skimp on salt and pepper else its
pretty dang bland. Then baked a long dang time until the carrots and
potatoes are soft, which depends on how thin you cut them. Hard to screw
up and my kid likes it. I only make it when its the two of us home.

If I were to re-write the recipe using noodles, Id omit the carrot, add
mushrooms, use cream of mush soup and call it stroganoff hotdish. Ha!

birthday to go out to dinner with him. I'm betting she wanted to spend
it with *real* friends and people her own age. She sure didn't jump at

Not sure yet. I have fennel and Delicata squash to roast but it's warm today
so might wait on those until it gets cooler. Have to go to the store.

I have made similar but no carrots. Need to try with carrots.

Angela went through a phase like that when she was younger. Chicken was the
only meat she would eat. She like chicken on salad with a sesame dressing
that Costco sells every few years.

My meals for just myself have a lot of sameness. For instance, my breakfast
is almost always cottage cheese and toast. When I was working I had salad
for lunch every day. I might have varied the veggies a bit.

You described it in another reply as scalloped potatoes. My mother
occasionally made scalloped potatoes with a white sauce but the meat was
usually cubed ham or browned sliced smoked sausage. It was tasty. :)
She didn't call it a "hotdish", though.

Now I'm thinking I need to make scalloped potatoes sometime soon!

We like variety ... well , at least I do and since I do most of the
cookin' ... I try not to serve the same meat or "genre" two nights in a
row . Tonight pork fajitters , tomorrow mid-America pot roast and
Tuesday it's Cajun red beans and rice . She got me my own recipe file ...

layers of sliced taters , green beans , mushrooms , ground beef , thick
slices of onion and topped with a can of Cream O' Something soup .

As €ślike€ť scalloped potatoes, but not scalloped potatoes. Like your moms,
scalloped potatoes have ham, not hamburger and carrots. I was using that
comparison as a descriptor to give Gary an idea what the finished product
was like. Scalloped potatoes arent €śhotdish€ť in my house (a small
technicality)€”theyre a side item.

Yep, I can see my error now. I should have said €ślike€ť but didnt. This is
NOT scalloped potatoes, but when you add a white sauce to potatoes and
bake, the basic outcome isnt much different. :-)

Im not even sure my recipe is a €śreal€ť recipe€”its just something my mom
made when I was a kid and my daughter likes it, so I make it for her. Ive
never, ever seen nor heard of it anywhere else. I just googled it and
cant even find anything super similar online (although I didnt search
long).

That dinner has been postponed until a late lunch tomorrow
(2:30PMish). Had too much blood sucked out of me today and didn't
feel like cooking. Instead, dinner was highly modified $1 Totino's
pizza (added cheese, pepperoni, and hot giardiniera) and some spicy
epazote potatoes.

It took me three days to get that dinner this far (marinating + SV),
it can wait another 20 hours.

True enough! By €śreal€ť I mostly meant identifiable by some greater
collective of people, either by region, or culture, etc. The only two
people that I know that make this are my mother and me, but I dont doubt
there are lots of similar things out there.

They are good with a small bit of diced ham in them. Not a ton, just a
smattering. Which of your two methods do you prefer?

Not really. I have several different dressings that I rotate through.

Don't forget that I work. I come home, get dinner on the table as
quickly as possible, and go to bed early.

Scalloped potatoes is a casserole. Hooray! Now we get to argue over
the definition of a casserole again.

Ham is a classic in scalloped potatoes.

All the stuff most people do after work and before bed, I do in the morning.

Anyway, I didn't mean to imply that I go to bed immediately after dinner.
Just that my evenings are relatively short, by choice.

I know someone who lived the way you seemed to describe and it was
totally depressing to witness, even from a distance. Good for you, if
you don't sacrifice your life for someone else's company.

We had burgers. Cubes of chuck was hacked to pieces with my cleaver. I don't recommend that old folks use this method because they might lose something that they planned on taking with them in their afterlife. I put a couple of peppers on the chuck and chopped that all to heck too. The burgers were served with some buttered squash, cucumber/carrot with sesame dressing, and kim chee.

My husband and I joke that he broke our circadian rhythms when he had a
gig collecting data pre-dawn one summer. We had our alarm set for
2 am so he could get set up before sunrise. We've been extreme morning
people ever since, although we now consider 4 am a good wakeup time.
