Why are you soaking the chicken strips in egg before coating? Do you mean
you are dipping the strips in the egg before dredging?

Dunno, always just beat the whole egg. I've also changed to a mix of
flour and corn starch too. I like the way it fries up.

Yes J. I soak in egg, garlic and stuff. I will season that with a bunch. Pepper, garlic, dill if in the mood. What part of the egg Is Important

Thomas, the whole egg is good, unless you are cutting fat. Then you could use just the whites, I
I don't know for sure but my experience is the whites are stickier.

Flour and cornmeal mix is good, but try using Panko crumbs. Very crispy. I use a half and half
flour/cornmeal mix for fish, and Panko for chicken. Try dipping in egg, then flour, then egg again
and then Panko or your flour/cornmeal mix. Let dry for a bit on a rack. The extra flour dip works
to keep the final coating stuck to the chicken.

I don't know the science, but you can use egg white to keep your
hairdo in place. Assuming you live on a planet where eggs are
cheaper than hair goo.

Both the yolk and white combined do half the job. The flour type
coating does the other half. All is important. To save on
seasoning, pat your meat dry and season it well. Coat with flour,
then a dip into the egg wash, then back into the flour,
cornstarch, or panko final coating.

Also, I prefer a flour then dip in thick batter for frying
seafood.

That is exactly the way I have always done it!
