Sounds good. I don't use the cast iron as much as I used to, but for
some things, you just can't beat it.

Â* You got that right ! It took me a long time to get these pans just
right and it's been a learning experience . One thing I learned is that
I prefer a smooth finish over leaving the casting pattern . Harder to
season , harder to clean , and AFAICT the only benefit is a few pennies
saved by the mfr .

My cast iron main pan is a permanent resident of my stove top.
