Lentil stew
Made a lentil stew/soup yesterday. As usual, very good. I should make it
more often. Tried smoked turkey instead of polish sausage this time. Old family recipe: I use about two cups of lentils, diced medium onion, big tbs minced garlic, and meat. Both smoked turkey or sausage works. Probably others. Only takes a few ounces. Add salt & pepper if you wish - I don't. Put in crockpot, well covered with water, and cook 4 - 6 hours on high, You'll need to add water severa; times to keep in a bit soupy. When it tastes done and onions are nice and soft turn down to low heat until you are ready to eat. If you are not familar with lentils they don't need pre-soaking like other legumes. -- I love a good meal! That's why I don't cook. |

That's why I don't cook. Sounds good. I do a much simpler base lentil soup/stew (sauteed onions, split red lentils, water, salt, pepper, a pinch of chili flakes). Then I can change it up when I eat it. Today I sliced in some smoked kielbasa before I nuked it. Last time I ate it I added cauliflower. Next time I might add some cooked bacon, or maybe some cabbage. Sometimes I add curry spices, or other stuff. Cindy Hamilton |

They're common in Indian, Middle Eastern, Ethiopian, and vegetarian restaurants. There is an Italian restaurant in town that used to put a few lentils on their side salad. I have used the latter to "pad-out" a shepherd's pie when the minced lamb was a bit expensive. There are recipes for a totally vegetarian version but I haven't bothered. I don't know what all the fuss is about preparing them. I use the quick soak method and add them to stews with no problem. |

A few in a soup are good. But I still prefer beans. |

When visiting my son when he lived in Montreal we often ate in an vegetarian Indian restaurant. My wife wasn't crazy about it because he really likes her meat, but I loved it. They had real vegetarian dishes, not faux meats. |

I'd forgotten about her recipe! I usually add smoked sausage to mine but the spinach is a definite yes. I'm pretty sure it was this ng that got me interested in trying lentils.
