Default Red cooked chicken

It is absolutely delicious))

I took a couple of pics:

I didn't have any Chinese wine or sherry so I used the Marsala.

It is a big hit and he says he would like me to make it again)

Thanks for the help and advice, it was most appreciated)

I intend too keep the sauce for another time. Since I used sautéed onions
and leeks, should I strain them out, or just leave them in?

I had a very busy morning

I made bread, the red chicken and another Corned beef hash (which has gone
in the freezer

Got to keep the boss happy <g>
