i do bake with coconut flour, and coconut shredded flakes, once in a while
i wonder how this might be similar to coconut Oil though...? The AHA says that replacing saturated fats found in coconut oil or butter with vegetable oils like corn or peanut can lower cardiovascular disease by about 30 percent. That's almost the same amount as a cholesterol-lowering statin drug. http://www.cbsnews.com/news/why-you-...ealthier-fats/ marc |

I've never cooked with it though. My daughter makes some kind of skin treatment with coconut oil, salt, and matcha. I've used it as a hair prep. It's a good, clean, light viscosity, oil but for cooking I'd rather use ghee or soybean oil. OTOH, the idea of putting ghee or soy oil in my hair is kinda revolting. ![]() |

Also use it for baking some things, but I rarely bake either. Mostly we use it for skin and hair. Someone recently got Silly Putty in her hair. The coconut oil took it out. Wasn't easy. There was combing involved. But the good thing about coconut oil is that it's absorbed into the hair. Doesn't leave hair greasy. Except perhaps when you have to use a ton to get Silly Putty out but one quick shampoo and hair is good to go. |

Coconut oil is used a lot in movie theater butter - probably because it gives a lighter, more butter like, mouthfeel than other oils. That's important for popcorn. I wouldn't pay much attention to the article cited. It's pretty much par for the course for internet warnings of the foods we eat - it's not based on any scientific study and gets it power from our beliefs and fears of food ingredients/additives. |

That's why I don't cook. You might not have a problem with butter if you take out the milk solids i.e., use ghee. I guess that depends on what your problem is with dairy. |

For another, the sat fat in coconut oil is not metabolized in the body in the same fashion as animal fats. |

The reason they used to make this claim was that they were using partially hydrogenated oil. For all we know, this could have been used in this study. Plain, virgin coconut oil is not bad. |

Heaven forbid we maintain a system that helps to keep some stability in the dairy farming business and provides opportunities for people to make a profit from it. Dairy farmers I know work hard and rarely get away on vacation. Perhaps you would prefer the American model where supply and demand rise and fall and farmers are working on such a slim profit margin that dips in the wholesale price can lead them to having so little cash flow they cannot afford to feed their animals. |

I don't have an answer but I know the present system sucks. Of all the ways to earn a living, dairy farmer has to be one of the worst. And some guy in Washington is telling you how to run your farm. |

Mainstream sources of health/food info say that coconut oil increases bad cholesterol. Then there are alternative sources that say it's not bad for you at all and the mainstreamers are old, conservative and use obsolete data. Who to believe? But everybody agrees that olive oil and a few others are good for you. So why not use those? Seems like the safest bet. I never wake up in the morning with a craving for coconut oil anyway. |
