I found a salad recipe calling for candied walnuts;
home candied, so to speak.

Are there any tricks to get a similar effect,
without use of sugar?

no, candied implies the use of some sort of sugar -- honey,
white/brown sugar, maple syrup

Depends on what you call sugar. Other than the white stuff you can use honey, maple syup, Karo, etc.

Candied, as other posters have pointed out, implies sugar
or some other source of sugar like honey.

I'd substitute toasted walnuts or omit them altogether.
Recipes are really just a jumping-off point for your
imagination.
