In my opinion, Carey Holzman know a lot more about making a computer
than making pizza: https://www.youtube.com/watch?v=_riLfxPC43g. Using a tortilla for a pizza crust, while an interesting shortcut, and he can like what he likes, I don't think that a tortilla and pizza crust taste the "same." Using a knife on a plate rather than a cutting board just made me cringe. Even though if you look closely, it looks like he used a steak knife to cut up the green peppers, and I suppose a steak knife is designed to be used on a plate, it still made me cringe. Also, his not haviing a cutting board makes his claim of being a "good cook" a bit suspect. As for his selection of toppings, they are very different from what I would choose. Mushrooms, in my opinion, are just OK on pizza and are not what I would choose. As for the green peppers, I don't like green peppers on anything. I've had store bought pizza sauce, and I personally don't think it is in any way "sweet." As for the pizza stone, it is my understanding that they have to preheat for 45 minutes to an hour to really do much good. According to "The New Basics Cookbook" by Julee Rosso and Sheila Lukins a regular baking tray works just fine for pizza, and you don't get "a bread thing with sauce and cheese on it" or whatever it was that Carey said in the video.
