Default Blue Corn Bread & Cast Iron Skillets

Hi,

I've been looking over reciepes for Blue Corn Bread and many of the
reciepes require the use of a cast iron skillet. What does baking the
corn bread in a cast iron skillet buy me?

Thanx,
Ed Stuart

Even heat all around, bottom and sides, (due to the thickness and the cast
iron) and heat retention for perfect baking of corn bread.
