Default An unusual question? Exhaust hood/fume cleaning?

OK, this is a situation/issue I've never seen addressed by any one! Who
or what sort of company does one contact to 'clean' the exhaust vent
(over the stove) to remove the years' of accumulation of grease, etc.?
A chimney sweep? How/who do restaurants call when this regular
maintenance is tasked ? I'm quite curious :->
