Default Delia Smiths Leek, Onion and Potato Soup

Made some for lunch today - for a no trouble recipe, it's really
great. Some for the freezer and I'll be making this again.

When I was doing soup for my MIL I made a batch of that. (I know it
was that particular recipe because it's still in my bookmarked
recipes.)

Small warning - I found that it didn't freeze as well as I would have
liked. It separated a bit on thawing. Otherwise, it was delicious.

I have found the separation can happen with creamy soups, a quick
whirl with the hand blender seems to solve it for me.

I love potato and leek soup. I buy leeks from the vegetable stand when
they're in season. (At the grocery store the price is ridiculous). I
don't add onion, as leeks are sort of oniony all by themselves.

Good soup! But mine is not vegetarian since I use chicken stock.

I've never added onion either, I usually add some chicken stock
though. It's getting pretty cool here again but we're still a few
months away from winter. My favourite time of year for cooking

I normally have not cooked onions and leeks together, but this was
nice for so little trouble. I would use veggie or chicken stock,
whichever was handy. Recipes are written to be tailored by the maker

Indeed they are No need to stick to hard and fast rules with
cooking.
