Perhaps you've never had a good tuna casserole. Ever think of making
one from scratch instead of using canned products?

I haven't, but it's fun wondering how it might be done. Make homemede
CoM soup. Buy fresh tuna, if available. Roll yer own noodles. I can
see it. I can live with frozen peas. Whyzit gotta be tuna? Can I
use trout?

I can also see the need for a new gadget! Any recommendations ona
pasta roller? My orbital is an old Kenwood, but I can see a manual
stand-alone roller. ;)

Cheese is fine with tinned tuna as it's so processed it's nothing like

Hey Ken, can you tell us what you tried and what you didn't like about
them? That would make it easier to target one you might like.

For me, tuna cassarole springs back to when I was a kid working at
McDonalds and trying to put myself through college on the wages. That
doesn't mean it's a bad dish, just that it was one I could afford.

Here from memory is what me and my roomates did.

Open 2-3 cans of tuna (water pack) and squeeze the water out over a big
pasta boiling pot. Add water to that and add your pasta and boil to
al-dente. Same time, add 3 TB of margarine (much better with real
butter but we were college students) then add a chopped onion and heat
that to translucent/maybe a bit golden. If you have it, add some bell
pepper. The add milk and cubed cheese (we didn't have fancy cheese but
it was a variety of less expensive sorts) at about 2 parts cheese to 1
part milk.

Let that slowly meld then as the hot pasta was ready, we'd drain that
and add the cans of tuna to the pot with the melty cheese and onion
stuff, mix and chow down with a little paprika.

Haute quisine? No but then tuna cassarole generally isn't.

My mom always used a package of wide egg noodles, cooked, a can (or maybe it
was two) of cream of mushroom soup and a can of peas, drained, and some
tuna. Nothing else added. Mix together, heat through in the oven, then top
with some crushed potato chips or saltines and put back in the oven for a
few minutes.

When I took over the cooking, I tried making this with a white sauce
instead. I didn't notice much of a difference in the end result. Sometimes
I added cheese.

As an adult, I would use either method but add some dried onions and
parsley. I never use saltines. I don't like them on casseroles.

I have also mixed tuna with macaroni and cheese. That's good.

These days when I make it, I have to make a small amount. Daughter loves it
but I can't eat it if there is dairy in it and I haven't come up with a way
to make it that tastes good without it. Husband doesn't like it so much. I
just cook a couple of handfuls of whatever pasta I have open, use a small
can of peas, a small amount of dried onion and one can of cream of mushroom
soup. Ruffles potato chips on top.

I find it odd that potato chips would be uses but then, that may be
that I've not had that.

I had a roomate try it with Philly Cream cheese. I though it was
pretty bad...

Julie, you can skip the dairy by using a cornstarch white sauce and leaving
out the cheese.

I never eat or put peas in casseroles because I don't like them. I pick them
out of Stouffers frozen casseroles. ;-)) I add celery and onion instead.

why are you making tuna casserole? Have you heard of it and always
wanted to try it? Or, do you want to do something with canned tuna
other than a tuna fish sandwich. I have a tuna and rice casserole
that uses soy sauce, water chestnuts, that kind of thing. Or, I have
a recipe for a stuffed potato using tuna. If interested, let me know.

I've only made this two or three times in all my years. Here's what I
find interesting....when it's first made and comes out of the oven, it
always tastes so good and I wonder why I waited so long. Leftovers
don't taste good at all to me though. I just need to make a one
person meal with no leftovers once in awhile.

I think you can downsize everything in the recipe to get a one person
meal, except I'm not sure about the cream of mushroom soup. Does it
come in smaller sizes?

No the can size is standard. I might just make this again pretty soon.
It's been at least 10-15 years since I've made it. Sounds ok right
now.
