Tuna casserole recipe?
I've DLed several tuna casserole recipes I found with Google but didn't like the finished products. Anyone have a recipe you like? TIA -- You know it's time to clean the refrigerator when something closes the door from the inside. |

For me, tuna cassarole springs back to when I was a kid working at McDonalds and trying to put myself through college on the wages. That doesn't mean it's a bad dish, just that it was one I could afford. Here from memory is what me and my roomates did. Open 2-3 cans of tuna (water pack) and squeeze the water out over a big pasta boiling pot. Add water to that and add your pasta and boil to al-dente. Same time, add 3 TB of margarine (much better with real butter but we were college students) then add a chopped onion and heat that to translucent/maybe a bit golden. If you have it, add some bell pepper. The add milk and cubed cheese (we didn't have fancy cheese but it was a variety of less expensive sorts) at about 2 parts cheese to 1 part milk. Let that slowly meld then as the hot pasta was ready, we'd drain that and add the cans of tuna to the pot with the melty cheese and onion stuff, mix and chow down with a little paprika. Haute quisine? No but then tuna cassarole generally isn't. Carol -- |

When I took over the cooking, I tried making this with a white sauce instead. I didn't notice much of a difference in the end result. Sometimes I added cheese. As an adult, I would use either method but add some dried onions and parsley. I never use saltines. I don't like them on casseroles. I have also mixed tuna with macaroni and cheese. That's good. These days when I make it, I have to make a small amount. Daughter loves it but I can't eat it if there is dairy in it and I haven't come up with a way to make it that tastes good without it. Husband doesn't like it so much. I just cook a couple of handfuls of whatever pasta I have open, use a small can of peas, a small amount of dried onion and one can of cream of mushroom soup. Ruffles potato chips on top. |

Julie, you can skip the dairy by using a cornstarch white sauce and leaving out the cheese. I never eat or put peas in casseroles because I don't like them. I pick them out of Stouffers frozen casseroles. ;-)) I add celery and onion instead. N. |
