I'm making a family casserole recipe including sliced potatoes and rice
I've made many dozens of times. Question: will I ruin it if I just wash but not peel the sliced potatoes? What if I substitute brown for the white rice? I prefer high fiber meals and this will increase the fiber a fair amount in this recipe. TIA -- You know it's time to clean the refrigerator when something closes the door from the inside. |

No you will not ruin it. Brown rice and potato peels, well washed, are good for you and taste good too!! The evil food processing plants catered to people's ignorance and made things like white bread, white rice, etc. which many now considered the norm, but what else do we consider the norm today? Autism, diabetes, heart disease, obesity, cancers, etc.!! Maybe Mother Nature had the right idea all along!! |

Not ruin it, but you might get pieces of potato peel loose in the dish, depending on how you cut the potatoes, what kind of potatoes you use, and exactly how the combination of heat and moisture in the casserole play together. If the rice goes in raw, you might have some trouble, since it takes so much longer to cook than white rice. If it's pre-cooked or par-cooked (by you or by Uncle Ben for example), you should be ok. To make up the fiber I lost I added some 'Metamucil' type natural fiber tsp dose drink stuff to it. About 3 tbsp. Bad idea. Make gelatinous <sp?> lumps in casserole. Tasteless but unappetizing. They were very popular for a while, but I cannot remember the last time I saw them on a menu. |

I'd either partly cook the brown rice ahead of time, or add a little bit more liquid to the dish and increase the cooking time. I find it easier to just partly cook the rice ahead of time, which is what I do when I substitute wild rice for white rice in a hot dish. |
