![]() I always think of mushroom soup as "cream of"... but tonight's soup wasn't. I watched Martha Stewart demonstrate an unusual (to me) mushroom soup on the Today Show last week and I made it for dinner. It involves farro and wild mushrooms. I didn't bother to soak the farro overnight. I put it in cold water and cooked 15 minutes. Next time, I'll cook it 10. Anyway - I took the essence of the recipe and made it my own by powdering the porcini + dried mixed wild mushrooms and adding a can of Italian style diced tomatoes (+ some Tuscan seasoning).
