Default Your opinion needed on cake directions


I'm thinking about making this cake. I have all the ingredients. I
am mystified regarding the last instructions about mixing. No spoon?
What could that mean? What effect?APPLE DUMP CAKE

substantially similar recipe on-line at Recipzaar.com
under the name Apple "Dump" Cake, with some readers's comments.

1 1/2 cups sugar
[Mickelson book has 2 cups. I prefer brown.]
1 1/4 cups vegetable oil
[some have substituted 1 c. applesauce for 1 c. oil]
2 eggs
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
3 cups diced apples
1 cup chopped nuts
1 cup raisins
[some regard the nuts and or raisins as optional]

1. Preheat oven to 350 degrees.
2. Put all ingredients into a >>>large<<< bowl.
3. Mix with your hands as you would a meatloaf, gently but
thoroughly; do not use a spoon or mixer.
[I recommend wearing latex or non-latex gloves]
4. Bake in an ungreased 9x13 inch pan for 1 hour.
[some report 35 minutes was enough]
5. Cool before cutting.

I would just mix by hand, as instructed....probably a spoon or mixer would mush up
the apples, especially, and maybe some of the other stuff. I wouldn't call it a dump
cake, though, because it is mixed before baking.

O.k., I guess I was thinking the traditional method of make the batter

If it's a dump cake, you just dump it all in and bake it.

Doesn't anybody care when you take a dump in the cake ? are they
just used to it?

What that means is just dump it all together, and minimally stirring.
You can use a spon if you with, but not stirring, beating or mixing a
baked batter/dough is to keep the gluten in the flour from developing
and making it a tougher baked goods. You knead bread doughs to develop
the gluten and make the baked good tougher.

I am proud to say that even with working with a donut glazer with
150lbs+ of powdered sugar and water liquid glazze which looked kinda
lile drippy spooge, I never ONCE added to it with the real thing,
although I thought about it many times!! I DID used to make a phallus
out of a hunk of dough and hang it out the front of my apron though!
An old German baker taught me that trick when I worked at Venture's
bakery, beforfe the donut shop!
