If you are trying to stay low carb,
why not skip the colcannon completely?

I love steamed cabbage. I like colcannon, but could easily skip the
mashed potatoes and just enjoy the buttered cabbage with S&P. I also
love cauliflower cooked all sorts of ways.

Well, I like colcannon. And mashed cauliflower is very close in texture and flavor to mashed potatoes, so why not??

no cabbage is not "carby", potatoes are.

Because it's good? No reason to skip things, just find acceptable, delicious
alternatives. I really like adapting recipes to suit me. It's fun. :-)

No, cabbage doesn't, but the potatoes do, so cauliflower is a great
substitute.

That's why I said I could easily skip the potatoes and merely eat the
cabbage. I love cabbage! However, I'm not low-carbing so none of that
really matters to me. I don't overindulge in "carbs" so I don't need to
go out of my way to avoid them.

No reason why not. I'd just rather eat the cabbage than try to turn
mashed cauliflower into a potato substitute. I love a whole roasted
head of cauliflower. I love roasted cauliflower florets. I love
cauliflower soup. I simply don't want to mash them and pretend they are
"potatoes". I'll just eat the cabbage, or the cauliflower. Okay?

Who's *pretending* they're potatoes? They have close to the same taste and
texture, but it's definitely cauliflower, so was anyone asking you to eat
it?

Apologies to you. I read that thinking you were still using potatoes
but substituting the cauliflower for the cabbage or kale.

I now assume you meant that you replaced the potatoes with the
cauliflower.

No problem. Try it using cauliflower some time. It's yummy.
