The change I would make is to take out the 2 tbsp of butter and replace
with more coconut oil. I just don't see butter as a traditional Kerala
ingredient.

Ronnie, in your spice mixture does it matter whether the cardamon is white,
green, or black? I have all three.

Hi Wayne,

In my spice mixture, I use green cardamoms, along with the skin, so
the skin does not get crushed completely as the other ingredients do.

Don,

I agree with your suggestion, normally, I would use ghee and saute the
chicken in ghee...but yes, coconut oil will infuse more flavor in the
chicken.
