Default Slicing once-frozen cheese?


After thawing frozen cheese (usually sharp cheddar) I find it crumbles when
slicing, even if I take care.

Any tricks anyone knows to avoid this problem? Or how to preserve the
cheese for several months (after opening package) without freezing?

I wonder if a quick nuking after refrigerator or room temperature
defrosting, say 10 seconds, might work. I nuke refrigerated eggs for 10
seconds before cooking. That's enough to take of most of the chill and
seems to keep the yolks whole. I've heard horror stories about nuked
eggs so perhaps not everyone would want to do it.

Try slicing before freezing and separate the slices. However, it will still
have a change in texture.

Buy small packages (8 oz) and eat them up soon after opening. If you
go months inbetween, just buy new when you are in the mood.

How about if you slice it before you freeze it and put two slices of parchment paper between each slices of cheese. This way you could take out only the number of slices you need. I'm not sure how this would work but it sounds like it would.

Yeah. Don't freeze it. It will keep longer if you freeze it, but the
texture will suffer.

Sorry. It will crumble once frozen. Only good for melting into things,
IMO.
