Default Clean out the fridge rice

That's what I made tonight. Almost used up that giant bag of brown basmati
from Costco. Probably tossed 2 cups of the stuff. Although it was good, I
am kind of glad to get rid of it. It's more of a pain to make than the
Texmati because it requires rinsing and soaking. But dang it was cheap! I
thought it said "best by Aug 20" but it was really the 2nd. It was still
fine.

I made this with Mexican type seasonings, some of which were things to get
rid of but I did buy a few fresh today. Red and green bell pepper, yellow
onion, bunch of green onions, 3 tomatoes plus a slice. Dried jalapenos.
Small jar of cilantro salsa. Extra cilantro, oregano, chili powder, salt,
pepper and olive oil. Veggies all chopped or sliced. Couple of handfuls of
spinach that had been finely slivered. Two cans of beans. Cuban style
black, pinto and also a can of salt free peas that I bought by mistake.

I rinsed and soaked the rice then added the salsa and some water to make it
be 2.5 cups of liquid per 1 cup of rice. I then left it to cook, covered
for 20 minutes at slightly too high a heat so most of the liquid had cooked
off. So I added a small can of tomato sauce plus about two cans of water
and the rest of the veggies. Added a little more salt, then brought back to
a boil and turned down the heat. Cooked covered for another 15 minutes.
Perfect!

I had this as a meal and will continue to eat it all week until I get sick
of it. Husband had it as a side dish with smoked pork chops.

Normally when I have stuff to get rid of like that, I make soup. But it's a
tad warm here for soup.
