![]() The jury is in and it has been declared delicious! One 2.5 pound boneless pork shank (with skin still on and all that fat under it) is enough meat for at least 3 servings, maybe 4 and it's easily twice as much as we'll eat tonight. I chunked up the meat to plate, so I'll definitely take the easy way out and use a pork butt next time instead of making a special trip again to buy a fresh shank again. We had "cassoulet soup" on the weekend, which I thought was a brilliant way to use leftover cassoulet (or use the flavor components of cassoulet to make the soup from scratch)... so I will use the leftovers from tonight's meal to make pork ossobuco soup tomorrow.
