Walnut Lace Cookies
 
Walnut Lace Cookies
Mix

1/2 cup sugar
1 tablespoon flour
1/4 teaspoon salt
1/4 teaspoon baking soda

Cream the dry ingredients with

1/4 cup butter

Run

1 cup walnut

through the robot coupe until a coarse meal is obtained.

Beat together

1 egg
1/2 teaspoon vanilla

then thoroughly mix all.

Drop onto a baking sheet and bake at 375 deg F for 9 to
12 minutes. These can go from under done to over done
in a New York minute. Perfection is worth striving for.
The result is thin and can be held up to the light
where it looks like lace. The desired texture is
absolute crispness.

Parchment paper is recommended.

Not exactly cookies, but crackers. I watched Alton Brown make parm reg
cheese into crackers and not just plain, but with seasonings. I'm going
to be trying those.

Not Alton Brown's recipe, but yes... me too! I made a cheese
shortbread once and could barely choke down one piece, but those
(parmesan) crispy, cheesy, melty, thingies have me fascinated. I will
probably not be able to eat very many because they'll be too rich for
my tastes and I'll lose interest quickly - but I want to try at least
one so I can form an opinion based on fact instead of theory.

I have made those. They are good. Actually you can use any cheese. Well
pretty much any. I wouldn't use a soft one.
