Default Need ideas for shredded carrots

I want something I can use for a filler and a little crunch on
sandwiches and wraps. NOT 'carrot and raisin salad", (my mom used to
make that; I don't hate it but it's not at all what I want) but some
kind of dressing on the carrots. And I don't want it to overpower the
ham or turkey or cream cheese etc.

Something like an Asian green papaya salad, but simpler and made with
carrots would probably be about right. Wha'd'ya think?

BTW, anybody have purslane (a weed) growing in your garden? It is
pretty good in small amounts raw in a salad or sandwich, and is supposed
to be *very* nutritious. I pulled a bunch yesterday and have been
nibbling on it this weekend. I wonder if it is any good pickled...

I would try a little seasoned rice vinegar.

You could do a search for "carrot salad no mayonnaise". The first one
I looked at had this dressing, which seems like it might work with
your combination of carrot and green papaya

Dressing:

1 Tbs white wine Vinegar
2 tsp. Honey
1 tsp. ground Cumin
1 pinch Salt
1/4 cup Olive Oil

Switching out the honey for orange marmalade might work too.

This isn't really what you're looking for but today's lunch I had
a vegetable wrap with shredded carrots, broccoli florets, red onion,
cheddar cheese, (all cut up small), etc, with a drizzle of balsamic
and olive oil. That little bit of balsamic gives a really nice flavor.

I looked at images, I'm sure I've seen that in the many weeds that have
come up in my yard since having a bunch of dirt trucked in. Not sure
I'd eat it since we put stuff down on the grass and I'm trying to avoid
poisoning myself more than usual.

I wish I had an exact recipe for something I had in France about 10
years ago. It was side dish in a three course menu lunch we had in a
quaint auberge near Verdun. It was shredded carrots and crushed garlic
with a vinegrette. It was heavy on the pepper. It was delicious.

I have a lot of weeds this year and after seeing that purslane is a good
source of omega-3 I had a look at my weeds. I have some that look close
but I found out there's a poisonous weed that looks very similar and
they grow near each other, and similar behavior. As in growing in
driveway and sidewalk cracks. I'll pass.

Yeah. I mistook buttercup leaves for something else. Luckily I didn't eat
them. From now on, if I didn't plant it, I won't eat it. If I see it
growing in my yard that is.

shredded carrots into many things with no particular change in flavor or
texture. Nearly nobody says, "Oh boy! Carrots!" but they are good for you.

Dawg is on a bland diet this weekend. I've been feeding her turkey and
rice, and add a carrot just for some vitamins and fiber: Brown 1/2
pound of cheap ground turkey and a grated carrot. Meanwhile start
cooking 1 cup of white rice in 2 cups of water and a small beef bouillon
cube. When the turkey is done, stir the rice and dump the turkey on
top. Cover, let sit until cool and mix it up good.

I tasted it, and it's not bad.

I'm not sure boullion cubes are good for "dawgs". I'm not sure they're
good for people, either.

Prostrate spurge. But it doesn't look that much like purslane, and
spurges have milky sap when you break a stem.

I packed a quart jar with purslane stems and leaves tonight, and added
white vinegar, sugar, salt, water, and dark mustard seeds. Gonna see
what kind of pickles the stuff makes.

The difference between purslane and spurge are easily identifiable.
If you get a reliable source for purslane, I encourage you to grow it.
