I made two enchilada casseroles yesterday. I did screw up some time back
and bought a can of diced jalapenos, thinking they were chiles. I put those in my husband's. His had chicken, cheese and sour cream on top. No complaints other than that he had the same thing two nights in a row. I used the same sauce on both. Albertson's brand, mild. Vegetarian refried beans in mine. Both had green peppers and white onions on top and I put a can of chiles in mine. Mild chiles. I just checked the can. I feared that it might be too mild for me and came close to putting some green Tabasco sauce on it. Good thing I did not! There is some kind of heat in here and it's a bit too much for me. I am eating it but I am feeling it! I have another can of those chiles in there. But I am not sure I will buy that same enchilada sauce again. And I might just use the chiles in whatever I make for husband because he likes the heat! I can take a little heat but this is overwhelming! |

I was not impressed with the refried beans of that brand. They weren't bad at all. I just prefer other brands. Have actually only had one brand of refried beans that I didn't care for, because they were soupy. They tasted fine though. That would be the Hytop. I think my favorite enchiladas ever were cheese and onion. It was a scratch recipe that I got many years ago from some onion website. My second favorite was what I tried to recreate in the casserole. It was a refried bean one with green peppers and white onions on top. Got them at Los Amigos. Loved that restaurant! They had two locations, both of them gone now. The last time I ate at one, it was in North Seattle or maybe it was Lake City? Had not eaten at that location much since the Edmonds one was closer. I ordered enchiladas and they brought them to me with flour tortillas. I thought they had just made a mistake, so I called them back to tell them. Waitress gave me a dumb look and said, "Oh I know! We were out of the corn ones!" No apology. No offer to get me something else. Food was edible but had I known, I would not have gotten them! I have since had a particular enchilada with flour tortillas from Ixtapa but it is stated as such. It is not oven baked and has lettuce in it. It is served wet but not really gloppy with the sauce. Alas I can not have those any more or the cheese ones because of my dairy problem. They use dairy in the sauce. |
