Sweet Potato Biscuits #2 - a recipe from Mike Muth
If you add too much milk, turn this out into a greased 8 x 8 inch pan and cook as you would a cake. Makes 8 biscuits. 205 Calories, 41 grams net carbs, and 1 gram fat per biscuit. 2 cups flour 1 3/4 tsp baking powder 1 large sweet potato pinch salt 1/2 cup sugar 1/2 cup milk 1 tsp butter pinch cinnamon Boil sweet potatoes until tender. Peel and mash the potatoes with the sugar and butter. Sift the flour, salt, cinnamon, and baking powder together. Add the potato mixture to the sifted ingredients. Add enough milk to make a soft dough, about 1/2 cup. Pat out to about 3/4 inch thickness and cut into biscuits. Place the biscuits on a greased baking sheet. Bake at 350° F until browned (20 - 25 minutes). -- Mike |
