Hmmm. Flavorful but not dry ...

Chicken a la King
Pound 'em out thin. Roll something spicy/veggie/fatty (sausage/spinach/
cheese for instance) in them, bake.
Cut into strips or cubes, "Buffalo" them in butter and hot sauce, top
a salad with them. Add blue cheese chunks.
Ditto but use BBQ sauce, raw onions, hot peppers
