REC: Buttermilk Pie, an oldie but a goodie
From the days when ‘crustless’ concoctions were all the rage. A Southern tradition—this easy pie is perfect when your sweet tooth demands immediate attention. Impossible Buttermilk Pie 11/3 cups sugar 1 cup buttermilk 1/2 cup baking mix, such as Bisquick (The light version works fine.) 1/3 cup unsalted butter, melted 1 teaspoon vanilla extract 3 large eggs 1/3 cup flaked unsweetened coconut (optional) cocoa powder and/or confectioners’ sugar for garnish (optional) Preheat oven to 350 degrees. Butter or spray bottom and sides of a 9- inch pie pan. Combine sugar, buttermilk, baking mix, melted butter, vanilla, eggs and coconut in a large bowl or a blender. Whisk or blend until smooth. Pour mixture into prepared pie plate and bake until browned on top and still a little wiggly in the center, about 40 minutes. Top will look a little craggy. Let pie cook for 10 minutes before slicing. The pie will set as it cools. Sift cocoa powder, confectioners’ sugar, or both over the wedges before serving. Good served warm or cold. |
