REC: Shrimp with White Pepper
 
Had this tonight and had forgot how good it is. It's from the Lotus
Garden in Hyannis, MA, via the Cape Cod Times.

SHRIMP WITH WHITE PEPPER

3/4 pound shrimp, shelled
1 egg white
2 1/2 tablespoons cornstarch
1/2 cup red or green peppers, cut in 1/2-inch squares
1/4 cup onion, diced
1/4 cup scallions, cut in 1/2-inch pieces
1 tablespoon chopped parsley
1 teaspoon salt
1/2-1 teaspoon ground white pepper

Marinate shrimp in mixture of egg white and cornstarch. Cook quickly
in hot oil, turning once; remove. Stir-fry vegetables 2 minutes or
until tender. Add shrimp and stir for 1 minute. Add salt and pepper;
stir.

Note: This doesn't list any cooking of oil. I use just enough to cook
the shrimp, and then remove some to leave just enough for the
vegetables.

Looks good, thanks! Did you have it with anything else other than the
veggies? I can do the onion, but not the peppers.

That's a heap of salt. I'll bet you could cut it in half with no harm done.

My guess is that you could do it with almost any vegetable,
particularly ones that often show up in Chinese stir-frys.
