Default Mashed Potato Pancakes

Yeppers, I have enough leftover mashed potatoes from dinner last night to
make potato pancakes! I haven't made these in a long time. They're
delicious!

For those who don't know how, you just add an egg to the chilled (that's
important) mashed potatoes and mix it together. Add some minced onion if
you like. Form into patties and dust lightly with flour. (I let mine set a
bit on a sheet of waxed paper which is also sprinkled with flour.) Heat a
little neutral oil (just enough to coat the bottom of the pan) in a good
sized skillet. Get the pan hot! Not smoking hot, but hot. There's nothing
worse than gooey greasy potato pancakes! Gently place the patties in the
oil. Cook over medium heat about 4 minutes or until the bottom is golden
brown. Turn them, then gently press down with a spatula to make them more
pan cake-like Continue cooking until the other side is browned. Remove
cooked pancakes to a paper towel to blot off any excess grease (there
shouldn't be much if you had the heat right). Yum!
