![]() I hope you enjoy these, Storrmmee, and anyone else that makes them. I have been making these for more years than I can remember, and are always a hit with anyone that tastes them. Are a very soft cookie and makes quite a few, but I never have counted how many I get from a batch. They also won me a blue ribbon in a local baking contest. Frosted Fresh Orange Cookies 1 cup butter 1-1/2 cups brown sugar, packed 2 eggs 1 tbsp. grated orange rind 1 tsp. vanilla extract 3-1/4 cups all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1 tsp. baking soda 1 cup buttermilk Stir soda into buttermilk to dissolve; set aside. Cream butter and brown sugar together. Add eggs, orange rind and vanilla and beat in well. Mix flour, salt, soda and baking powder and add to creamed mixture alternately with the buttermilk, mixing well. Drop by heaping teaspoonfuls, about 2 inches apart, on greased baking sheets. Bake 350º for 10 minutes, or until golden brown and feel firm to the touch of your finger. While still warm, frost with orange icing. Orange Icing: Beat together until creamy; 3 cups powdered sugar, 4 tbsp. (1/4 cup) butter, 1 tsp. lemon juice, 1 tsp. grated orange rind and enough fresh orange juice to make desired spreading consistency. Enjoy! Judy |
