Yes, the problem with poultry is that potential contamination is not
confined to the surface only, but is present throughout. Beef and pork meat
(trichinosis excepted for pork) is sterile inside; contamination when it
occurs is on the surface of the cut being ground. So one infected piece
can contaminate the entire ground batch, and this isn't addressed by
cleaning the grinder.
