In New York, some are grilled and others boiled. My favorite is boiled from the pushcarts in the street. The ones with the blue and yellow Sabrett umbrellas, for example. They are kept in charcoal-heated water just below a simmer. The right way to eat them (according to me) is with deli mustard (applied with a dowel) and an onion-***-tomato sauce. Relish or sauerkraut is the wrong way to go; save those for the grilled ones.
I started eating them when they cost a nickel, and felt a sense of outrage when they went up to $.07 around 1942. War inflation! Little did I know what was coming. Jerry -- Engineering is the art of making what you want from things you can get. |
