Default Doc's Lime-Cilantro Marinated Flank Steak

Doc's Lime-Cilantro Marinated Flank Steak
Categories: Beef, Grill, Original, Dixie, Southern, USA, Main dish
Yield: 6 servings

3 lb Beef flank or skirt steak
4 ea Garlic cloves
1/2 ea Red onion chopped
5 ea Limes + juice
1 ts Habanero pepper seeded & diced
2 tb Fresh thyme leaves
1 c Cilantro leaves
3/4 c Peanut oil
2 tb Honey
4 tb Sour mash whiskey
1/4 c Sour nash
Sea salt to taste


Puree garlic, onion, limes, lime juice, jalapeno, thyme, cilantro,
corn oil, whiskey & honey into your blender.
Marinate your steak with 1/2 cup of puree in a resealable bag for
8-12
hrs. in refrigerator.
Reserve remaining puree to use later as your sauce.
Pre-heat your grill to med-high heat.
Remove steak from refrigerator then allow it to sit at room temp for
30-45 mins.
Liberally season your steak with sea salt.
Cook for approximately 4-5 mins. per side or to desired doneness.
Slice your steak against grain into 1/4" thick slices.
Drizzle remaining marinade over steak slices.
