Right, but that's a practical consideration for me, and while it's part
of my passion for food, it's not as big a part of why I really enjoy and
am passionate about it.

I can make better food than most found in restaurants I could afford to eat
in daily. Than any, really. I can't afford Michelin starred restaurants
ever, white cloth and maitre d' seldom and I can if I take the trouble, cook
at a very high level. That's because I never could afford to eat like that
unless I mastered the craft. So I did.
