Default Semi WW Mexican Chciken stew

I know this Ain't Mexican ( so sue me)

1 BS chicken breast 9 to 12 ounces (or more) cubed

The following should be diced 'bout the same size as the chicken cubes

3 medium carrots
1 medium large potato
3 several ribs celery
1 Large onion
1 16 OZ (used to be) can black beans size rinsed and drained
EVOO for frying/sautéing
1 Large can Red Enchilada sauce (heat your choice)

flour for dredging
Lime pepper seasoning
A good shot of chili powder
some Accent (MSG)

Mix the flour & spices - toss the cubed chicken in the flour mixture & brown
in olive oil.
Remove the browned chicken from the pan

Add the veggies & sauté for a few minutes. ( add 2 Oz of water & cover if
you want)
Add the chicken
Add the enchilada sauce.
Add the rinsed black beans

Cover & simmer till tender.

Serve in bowls with cornbread (yes even Wayne's cornbread)

Just 'bout very few points.
