Would you freeze unused kidney beans from the can?; bought containersfor chicen broth
Would you freeze unused kidney beans from the 16 oz can? How long
would you leave it in the freezer before using it. Summer is almost here. Reminds me of the eveges I blanched and oput in freezer two year ago in the summer. I still have a bit left. If you blanch veges and feeeze them, how long do you leave them in the fridge? BTW, I bought some stackable rectengular shape containers found at safeway. I like the size and shape but I don't like that the edge of the sides are curled back such that in the dishwasher, it'd hold water in the pocket but if I don't wash it and just put those empty ones back in the freezer re-use them, I won't have to deal with that issue. I might get more of those to out those unused beans from the cans though I am not sure I'd like the taste after I freeze them. |

Beans are relatively cheap, so I would either manage to use them in a meal within a couple of days or discard them. If you freeze them, you're liable to forget you have them, locating them could be a pain.....not worth the trouble. Toss them with some tuna, some cooked macaroni and a light dressing of vinegar, oil and some spices. Makes an easy lunch. Or use in a batch of chili. |

I was wondering whether smaller cans are available. My plan is to add a little in salad which I am thinkingn to eat more regularly now, buying those pre pacakaged salad. The only other way I'd like kidney beans or garbanzo beans woulf Indian dishes but I can't handle the spice on regular basis and also it'd involve cooking. For those dish, I'd just use dry beans and soak them and then boild them. I learned how to make "Rajma" from an Indian friend and the small garbanzo one (Burmanized Indian dish) from a Burmese friend. Both dish use serious spice. I haven't made Rajma for a long time. You're the one with the dilemma. If you freeze them they won't be any good for a salad once defrosted... use for a dip because they'll be mush. Why not keep part of the can in the fridge, they will keep for week, you can use the remainder in your everyday salads. Just transfer them from the metal can to a non reactive container. I agree that "the skins split and bulge and they turn to mush," but I can't imagine the taste would be altered just from freezing, unless you left them in the freezer too long, maybe more than a few weeks. It does. I was thinking to put both kidney beans and garbanzo beans in salad and so I'd be opening two cans and was concerned about not finishing them in a week. I have not used soaked then frozen beans in things like hummus or falafel - two recipes where I use garbanzos but tend to use canned as opposed to dried. If I had to pick a bean that would take well to freezing, I'd say garbanzos. In any case, canned beans, once opened will be fine in the fridge for at least a week - give or take. -Tracy |

You, though, seem hellbent on doing it, so consider a small experiment: Put a few beans in a small freezer bag, seal it, removing as much air as possible from the bag, and freeze it for maybe 2-4 weeks. At the end of the predetermined time (mark a calendar with a reminder so the bag doesn't get forgotten), take the bag from the freezer and let the contents thaw slowly in the refrigerator (probably overnight). Next day, use the beans however you will and decide if the texture and flavor are satisfactory for your purpose. When you mention two beans in a salad, I'm drawn to thinking of a marinated bean salad, comprised of drained, rinsed, canned beans; chopped onion, chopped celery, and a vinegar and oil marinade.
