Caramelised capsicum and chilli relish
3 green capsicums 11 long green chilli's, seeds removed and chopped 2 cups brown sugar 3 cups white vinegar 1 red onion roughly chopped 2 cloves whole 4½ teaspoons table salt Place all ingredients into a large saucepan over medium heat and stir until the sugar has dissolved. Bring to the boil and cook for 55-70 minutes or until still runny. Carefully spoon the hot relish into sterilised jars. Makes 3 cups. Serve with crispbreads and salty cheese such as fetta or aged cheddar.
