Default Pirohy

I was planning to make Barb's pirohy tomorrow, but I got the urge to do
it today. Then I saw that I only have 1 egg, and only have Swiss cheese,
but James to the rescue! He wanted a walk anyway, so he's going to pick
up cheddar cheese and eggs for me at the store so I can fulfil my (and
now, his) urge to have pirohy NOW!

(I love pierogies, but have only had the store-bought frozen kind. I am
realllllly looking forward to this.)

As I just told Barb, "The dough is resting now. I assumed "1/3 to 1/2
cup" is water. I used almost 1/2 cup. I'm really not sure what
consistency I'm looking for on the dough, but it's a nice ball of very
slightly sticky dough, so I'll see how it goes in 15 minutes. (It says
10 in your instructions; I'll wait a bit longer.)

"The potatoes and cheese and onions are mashed together. The onion
butter is done -- wow, that's quite a bit of butter. :-) Now I just have
to wait and roll and fill. Yay!"
