Barb-Remember I asked you about freezing the corn
relish? You said it keeps forever in the fridge but I wanted to try it out anyway. I froze half my batch and the other half was eaten over a couple weeks time so kept in the fridge. I just defrosted and tried the frozen relish and it was BETTER for having been frozen! The corn had softened up a bit more than the refrigerated batch, which I thought was an improvement. My unfrozen batch was still a wee bit too firm, I felt. Just thought I'd let you know it works fine. ![]() Goomba |
