Tonight for dinner I plan to broil a whole 7lb chicken with lemon,
rosemary and time (pretty standard). However, I'm undecided about vegetables. I cas thinking of either roasting some fresh veggies in the pan with the chicken, perhaps yellow squash, pearl onions, celery, carrots etc, or roasting red skinned potatoes with the chicken, or sauteing some asperagus with garlic. I just can't make up my mind which. Also, if I roast some veggies with the chicken, should I precook any of them besides the potatoes? Will any of them over cook if I put the in with the chicken (especially the squash)? Advice is appreciated! Thanks, Adam |
