Default Pearl Onions

My husband is telling me about a dish made w/ peas, pearl onions and cream.
He would like to have it for Christmas dinner but I can't seem to find a
recipe!
Does anyone have anything that would fit the bill?

It should be on the FoodTV site, Tyler Florence made creamed pearl
onions on Food 911. Look for the goose episode. They looked really
good.

Rachael Ray had a recipe for smashed peas using cream. Can't remember
if pearl onions were a part, but would be easy to add. Check FoodTV
recipe file to see if it's still listed in her 30-minute meals.

(laugh) Just timing ... anyway, I'm going to make them, too. However,
my Christmas dinner might not happen until Friday as a certain
someone didn't take the roast out of the freezer until this morning.

Default Pearl Onions

CREAMED PEARL ONIONS
Active time: 1 1/4 hr Start to finish: 2 hr
3 lb white pearl onions
2 tablespoons unsalted butter
1 teaspoon sugar
3/4 teaspoon salt
5 whole cloves
About 4 cups water
1/2 cup heavy cream
1/4 cup finely chopped fresh flat-leaf parsley

Blanch onions in a large pot of boiling water 2 minutes, then drain and peel.

Heat butter in a deep 12-inch heavy skillet over moderate heat until foam
subsides, then cook onions, stirring occasionally, until golden in patches,
about 8 minutes. Add sugar, salt, cloves, and enough water to cover onions and
simmer, covered, until onions are tender but not falling apart, 25 to 30
minutes. Boil onions, uncovered, until liquid is reduced to about 1/2 cup,
about 20 minutes more.

Stir in cream and simmer, stirring, until slightly thickened, about 5 minutes.
Discard cloves, then season with salt and pepper. Stir in parsley just before
serving.

Cooks' notes:
€¢ Onions can be blanched and peeled 2 days ahead and chilled, covered.
€¢ Creamed pearl onions can be made 1 day ahead and chilled, covered. Reheat
in a heavy saucepan over low heat, or in a microwave, stirring occasionally.
