OK, I read it all now. To me the bread was raised too long at too high a
temp. These kinds of breads rise in my fridge at least 12 hours. Think you
agree?

Probably. There were many of us who made the recipe and had the same
sort of problem, so maybe it's a recipe problem? I did exactly as he
said to do.
