Default Recipe: Chocolate Walnut Fantasies Cookies

I baked these this morning; they're okay (especially if you've got some
coconut you want to be rid of :-), but I think a bit of salt would have
helped. I used insulated baking sheets, set my oven for 360 (it runs a
titch cool) and baked them for 10 minutes. The edges were brown at 10
but they could use the full 11 at my house. Next time.

Chocolate Walnut Fantasies

Recipe By: Somebody's post to rec.food.equipment 1-7-2008

1 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
4 ounces cream cheese, softened
2 eggs
2 -1/4 cups all-purpose flour
1 teaspoon baking soda
1-3/4 cups coarsely chopped walnuts
1 cup sweetened flaked coconut
7 ounces milk chocolate candy bar, cut into chunks

Heat oven to 350 degrees.
Combine butter, brown sugar, sugar and cream cheese in large bowl. Beat
at medium speed, scraping bowl often, until well mixed. Add eggs;
continue beating until well mixed. Reduce speed to low; add flour and
baking soda. Beat until well mixed. Stir in walnuts, coconut and candy
bar chunks by hand.

Drop dough by rounded tablespoonfuls, 2-inches apart, onto ungreased
cookie sheets. Bake for 9 to 11 minutes or until edges are golden brown.
Let stand 1 minute; remove from cookie sheets.

The recipe sounds tasty, but do you suppose it would work w/o the coconut?

I think so, but I think I'd add maybe 1/4 - 1/3 cup more flour if you
leave out the coconut. Add 1/4 tsp of salt to it, too. It really is
kind of flat to my taste.
