Chicken? I have plenty of spices, herbs, tequila, lemon, lime, just need
some ideas.

I'm kind of a minimalist: salt and fresh ground pepper. A famous
restaurant in San Antonio allegedly uses tequila, so maybe some of that
too? Don't add any lime or lemon until you cook it; chicken is tender
enuf already (unless you've cut up an old rooster ;-)

Just something I noticed is that none of you guys use cumin. Any Mexican
meals I make (well don't really use recipes), use cumin. Is there a
reason why it's not included in a fajitas marinade? It's in mine along
with tequila, lemon, lime, chili peppers, and a few fresh herbs like
coriander and parsley. For the grilling, love grilled red peppers, and
meat only in the flour wraps.

BTW, chicken or beef make me happy, as long as they are grilled, are
fine with me.

Serene, not a fan of cumin, but some foods need it, like chili and many

That looks good. :-)
The only change I'd make is to replace the cayenne with chili powder.
I've recently totally lost my taste for really hot stuff, altho' I do
buy Pace medium picante. To me, their mild is so mild, it tastes like
ketchup.

The real reason for the fajitas is that I got some really wonderful and
sweet red and green peppers and a couple of really great onions. I recently
also bought a lot of chicken breast at $.99 a pound. It's what's for dinner
today after the temperature drops below 100F.

That sounds good with a little garlic and salt. I think I'll try this when
I do chicken halves on the grill. Don't know why, but it seems like it
would work well on bigger pieces of chicken.
